I appreciate the screenshot you've provided. Preventing the employee to view the COGS And Gross Margin in the Sales by Item Summary report  is currently unavailable.

As a workaround, you can remove the COGS And Gross Margin by customizing the report and memorize it. Once memorized, you can share this report with your employee without that information.

Here's how:

1. On your Sales by Item Summary report screen, click Customize Report.
   
2. Under the Columns section, remove the check-mark for COGS.
3. Hit OK.
   
4. After that, click Memorize.
5. Choose Save in Memorized Report Group.
6. Select Employees.
7. Tap OK.
   

Once saved, you can let your employees access it from the Memorized Reports section. See the sample screenshot below.
