The multi-currency feature in QuickBooks Online only allows you to assign specific currency types to the following:

• Customers/Vendors
• Price levels
• Bank/Credit Card accounts
• Accounts receivable and Accounts payable

The feature isn't available for other assets and other liabilities because it's a system limitation. You may find this article on using multi-currency helpful.
