If your contractor per IRS requirements, does not receive a 1099 due to organizational setup including S-Corps and C-Corps, then you cannot have them setup as a contractor?  This doesn't make a lot of sense. The old setup in QBD allowed you assign a type when setting up a vendor. This new setup in QBO is a loss of function.
