If you meant payee the person you want to write a check to this might work for you:

You can go directly to the "Write Checks" function under "Banking"

Choose the payee, you will be stuck with a date on the check, assign a modified check number by adding a letter or a high number so you can enter the actual check when it is time, or delete or void what you used to print it afterwards. Just remove all numbers, including "0.00" from the amount box and print.
