In QuickBooks Online's new invoice rollout, switching to the old layout is currently unavailable for Simple Start and Essential users. However, if you have the Plus and Advanced subscriptions, users can opt-in and go back to the old layout until they are migrated to the new invoice layout experience.
Since you mentioned that there's no option to switch back, this could be because of your subscription version. With this, I recommend sending feedback to our Product Development team to express your preference for the old layout in your QBO version.
