I appreciate you for taking part in this discussion, @stuc. Let me address your concern about the ability to switch back to the old layout in QuickBooks Online (QBO).
I understand that you prefer the old invoice layout. However, all QBO subscription plans will be updated to the new invoice and estimate experience. When we fully roll out the updates, you'll be unable to keep using the old layout option.

If you worry about being forced to migrate to another subscription, rest assured that you can continue using your plan as long as you wish.
Furthermore, you may personalize your sales forms, so they'll look professional when sending them to your customers. You also get to decide which information to include when emailing invoices.
