I tried all the options you have suggested above, but the problem persists.

Customer/Vendor/Name/Employee are blank for hundreds of transactions after the migration.

I pulled one transaction from QB Desktop Pro 2020 and have included screenshots of how it looks in QB Online.  Any help is greatly appreciated.
