I landed on this post because I encountered the same issue...

I could update the name when I opened the "Make Deposits" entry, like in BobbyJ's screenshot, but the other half of the entry still had the name that came on the import and I couldn't find where to change it....  Until I just edited it right in the ledger. Don't open the entry to the Make Deposits screen. Just edit it right in place.  I'm on Accountant Desktop 2022, but I also run Premier Contractor and can edit right in the ledger in that version as well. Hope this helps.
