As mentioned by my colleagues above, the option to delete an inventory item is not an option. However, you can make them inactive. To do so, let me show you how:
- In the left menu, click Sales.
- Go to the Product and services tab.
- Mark the items you'd like to change.
- Click the Batch actions drop-down.
- Choose Make inactive.
- Click Yes to complete the action.

As for your other concern which is to bulk change non-inventory items to inventory, it's unavailable since you can only do it one at a time. In the meantime, you can consider making the non-inventory items inactive, then, import the inventory items. This way, you'll do it in bulk.
