I can share some information about the process of turning an estimate into an invoice.
The Quantity (QTY) column shown when you convert an estimate to an invoice cannot be edited. You'll need to make the changes in the quantity by opening the Estimate transaction.
If you need to recreate the estimates, you can check out this article for the steps: Set up and use estimates.
You can use the Audit Log to look for the estimate which you want to convert to an invoice.
To do that:

Once you found the estimate, you can start editing the quantity from there. Then, proceed to Copy Estimate to an Invoice
