After I posted this I learned that my client has paid support so I asked them the same question and here's what they said:
Upon checking with my resources, unfortunately, QuickBooks Desktop does not officially support ARM-based CPUs. QuickBooks Desktop is primarily designed to run on Windows-based systems with Intel or AMD processors, which means it is not optimized for ARM architecture (whether 32-bit or 64-bit).
The behavior you're describing—QuickBooks Desktop working fine for several days but then refusing to load, followed by a cycle of uninstalling/reinstalling—could very well be related to compatibility issues with your 64-bit ARM CPU and/or the environment in which the software is running. Since QuickBooks Desktop is not officially supported on ARM-based machines, running it on such devices can result in unstable behavior.
Hopefully this can help someone in the future.
