Yes, we have a default set up exactly as you've screenshotted below.  Once we go to "Review and send", that default subject line is overwritten by one of Intuit Assist's suggestion.  Attaching a screenshot.  I have to manually change that each time.  There is no option to click on the Intuit Assist icon to ignore to change this setting.
