The option to turn off this feature is currently exclusive to QuickBooks Online (QBO).

What you can do in QuickBooks Desktop for Windows or Mac is to manually update the amounts when creating transactions. 

I suggest you keep an eye out for our blog site. It's where you can find Intuit product updates and news. Whenever this feature becomes available, you can be sure that you can find the update from the page I mentioned.
