I appreciate your ideas of wanting this functionality, @skipbales.
Currently, the return email address when sending transactions through Gmail will default to quickbooks@notification.intuit.com. However, you may want to consider RR11 suggestion to enter your email address in the email field instead of your customer's email.
I can see how important to have this option in QuickBooks. But I want to let you know that your voice matters and I'm submitting your feedback directly to our engineers.
