Your situation might be better served by using QBO instead of QBDT

 

But even if you had macbooks in the field instead of ipads you still cannot run  the PC based QB Enterprise, it's like trying t get apple juice from an orange

 

An alternative is to install a remote desktop app on your ipads, and each ipad connects back to one PC workstation running QB Enterprise. As long as the PC is on you can run any and all programs on it remotely from the ipads. Just liimit each ipad to its own client workstation to keep users separate in Enterprise.  (of course this presumes the following: A. the ipads have 4g or 5g lte connections or B. when remote you have either a free wifi available or use the hot spot built into your iphone)
