I figured this out after many years of ignoring it. While the subject line was good, it was pulling an old company name which I changed 5+ years ago.
What I never changed was my QB desktop file name.
I simply changed the file name (I did a backup and restore although you can probably just rename it) and now the QuickBooks generated email send method as the correct name.
