Right now when I add a new project, the Donor field seems to be mandatory. In some cases, we do projects that are not related to a certain donor. Is there a way to have the donor field being not mandatory?

Welcome to the QuickBooks Community. Let me discuss how projects work in QuickBooks Online. I'll ensure you can send feedback so your suggestion is forwarded to the Product Development Team.
Creating projects in QBO helps you record your income or expenses and allocating each project to a specific donor is needed so you can manage your data accurately. With this, there isn't currently a way to make the donor field optional or exclude it.
For now, I suggest going to the Gear icon in QuickBooks Online. From there, you're able to choose Feedback to submit a request about having the option to remove the donor field when creating a project. Any recommendations are sent to our engineer for consideration in future updates.
