I can understand the importance to be able to remove the accepted by and accepted date in your estimates/quotes. 

The features we release are driven by customer input. The more requests a feature receives, the higher it goes on our priority list. Your product recommendations can make a big impact on getting this feature to the top of our list.

I recommend submitting a product feedback through QuickBooks Online to let our engineers know of your thoughts about the estimates/quotes option in QBO.

To submit a product feedback, click on Settings and click on Feedback.
