You're right, everything must flow directly from QBD payroll. He might be referring to the affected accounts of the payroll Items. And to identify what a payroll item on a check is connected to, see steps below:
- Click the List menu on the upper part.
- Select the Payroll Item List.
- Double click on the preferred item.

4. Kindly route to this tab by clicking Next.
This way, we can check the and take note of the affected accounts. We also suggest clearing things up with the guy running the payroll.

So my next question is are ALL payroll items mapped to an certain account ?
Is it possible to just have a payroll item not mapped ?
The other question would be : If things flow directly to their appropriate account what is the purpose of doing JE entries to payroll clearing account ? I don't know i am kinda confused ?

You're right. All payroll items are mapped to a certain account. This way, you can track payroll in QuickBooks. Additionally, you will not be able to set it up if you haven't mapped a payroll item.
For your second question, the purpose of journal entry is for corrections and adjustments to your payroll. Using a Payroll Clearing is a default liability account for your payroll liabilities, such as taxes and deductions you withhold from your employees' pay. The two primary reasons to use a payroll clearing account are enhanced security and more efficient reconciliations and analyses.
You can also coordinate payroll manager if you need in depth insights about mapping payroll items.
